Instructions
- Whisk together the flour, baking powder, and salt in a large bowl.
- In a separate measuring cup, whisk together the milk, lemon juice, zest, yogurt, oil, egg, maple syrup, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined, leaving lumps.
- Heat butter or oil in a skillet over medium heat.
- Pour ¼ cup of batter onto the skillet and top with 4-5 blueberries.
- Cook for 2-3 minutes on each side or until golden, flipping when bubbles form.
- Serve warm with maple syrup.
