Ingredients

The batter

  • 1 cup all purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp fine sea salt
  • cup milk
  • 1 large egg
  • ¼ cup Greek yogurt
  • 1 tbsp oil
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 lemon zested and juiced

The toppings

  • ½ cup fresh blueberries

Instructions

  1. Whisk together the flour, baking powder, and salt in a large bowl.
  2. In a separate measuring cup, whisk together the milk, lemon juice, zest, yogurt, oil, egg, maple syrup, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients and mix gently until just combined, leaving lumps.
  4. Heat butter or oil in a skillet over medium heat.
  5. Pour ¼ cup of batter onto the skillet and top with 4-5 blueberries.
  6. Cook for 2-3 minutes on each side or until golden, flipping when bubbles form.
  7. Serve warm with maple syrup.
