Instructions
- Blend blueberries, banana, eggs, vanilla extract, almond milk, honey, and lemon extract until smooth.
- Add dry ingredients to the blender and blend until smooth.
- Incorporate melted coconut oil and blend until the mixture is thick but pourable.
- Heat a skillet over medium heat and spray with coconut oil cooking spray.
- Pour ¼ cup of batter onto the skillet and cook until bubbles form, then flip and cook until golden.
- Serve immediately with desired toppings.
