Ingredients

Dry Ingredients

  • cups white whole wheat flour
  • 1 cup fresh blueberries
  • 1 tablespoon lemon zest
  • 1 medium banana
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened, plain almond milk
  • 3 tablespoons honey
  • 1 teaspoon lemon extract
  • 3 tablespoons coconut oil, melted

Instructions

  1. Blend blueberries, banana, eggs, vanilla extract, almond milk, honey, and lemon extract until smooth.
  2. Add dry ingredients to the blender and blend until smooth.
  3. Incorporate melted coconut oil and blend until the mixture is thick but pourable.
  4. Heat a skillet over medium heat and spray with coconut oil cooking spray.
  5. Pour ¼ cup of batter onto the skillet and cook until bubbles form, then flip and cook until golden.
  6. Serve immediately with desired toppings.
