Instructions
- Combine almond flour, mashed bananas, egg yolks, and baking powder in a mixing bowl.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the pancake batter.
- Let the batter sit for 5 minutes to thicken.
- Coat a non-stick pan with cooking spray and heat over medium heat, then reduce to medium/low.
- Pour ¼ cup portions of the batter onto the hot pan and cover.
- Cook for 2-3 minutes, flip, cover, and cook for another 2 minutes.
- Repeat until all batter is used and serve immediately or store.
