Ingredients

  • 2 large bananas
  • 4 large eggs
  • 1 teaspoon baking powder

Instructions

  1. Combine almond flour, mashed bananas, egg yolks, and baking powder in a mixing bowl.
  2. In a separate bowl, beat the egg whites until stiff peaks form.
  3. Gently fold the egg whites into the pancake batter.
  4. Let the batter sit for 5 minutes to thicken.
  5. Coat a non-stick pan with cooking spray and heat over medium heat, then reduce to medium/low.
  6. Pour ¼ cup portions of the batter onto the hot pan and cover.
  7. Cook for 2-3 minutes, flip, cover, and cook for another 2 minutes.
  8. Repeat until all batter is used and serve immediately or store.
