Ingredients

  • 1.5 cups blanched super-fine almond meal
  • 3 large eggs
  • 1 medium ripe banana
  • 1 teaspoon baking powder (optional)

Instructions

  1. Blend the banana and 1 egg in a blender or food processor until smooth.
  2. Transfer the mixture to a bowl and whisk in the remaining 2 eggs until combined.
  3. Add the almond flour and baking powder, mixing until smooth.
  4. Heat a nonstick pan over low/medium heat and spray with nonstick cooking spray.
  5. Scoop about 1/4 cup of batter onto the pan and cook for 2 to 3 minutes on each side.
  6. Repeat until all batter is used.
