Ingredients

The batter

  • cups all-purpose flour
  • 2 tablespoons caster sugar
  • 1 tablespoon baking powder
  • cups lukewarm milk
  • 1 large egg
  • 4 tablespoons unsalted butter

Toppings

  • to taste butter
  • to taste maple syrup or honey
  • to taste fresh fruit

Instructions

  1. 1. Combine the flour, sugar, and baking powder in a bowl and mix well.
  2. 2. In another bowl, warm the milk and whisk it with the egg.
  3. 3. Melt the butter and add it to the egg mixture, whisking until combined.
  4. 4. Pour the wet ingredients into the dry ingredients and stir until just combined, avoiding overmixing.
  5. 5. Heat a nonstick frying pan over medium heat and grease it with butter.
  6. 6. Drop three tablespoons of batter onto the pan, spreading it into a round shape.
  7. 7. Cook until golden on the bottom and bubbles appear, about 1 to 2 minutes, then flip and cook the other side.
  8. 8. Serve immediately with butter, syrup, and fresh fruit.
