Instructions
- Preheat the oven to 400°F and prepare a 9x13-inch baking pan by lining it with parchment paper and greasing it.
- In a medium bowl, whisk together the buttermilk, egg, and melted butter.
- Add the whole wheat flour, all-purpose flour, sugar, baking powder, baking soda, and salt to the wet ingredients and mix until just combined.
- Spread the batter evenly in the prepared pan and top with fresh berries if desired, sprinkling with coarse sugar.
- Bake for 15-20 minutes until the pancakes are puffy and lightly golden, and the top springs back when pressed.
