Ingredients

The batter

  • 1 ¼ cups buttermilk or half sour cream/half milk
  • 1 large egg
  • 3 tablespoons melted butter
  • ¾ cup whole wheat flour
  • ¾ cup all-purpose flour
  • 1 tablespoon sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Optional toppings

  • 1 cup fresh berries or chocolate chips
  • 1 tablespoon coarse sugar for sprinkling

Instructions

  1. Preheat the oven to 400°F and prepare a 9x13-inch baking pan by lining it with parchment paper and greasing it.
  2. In a medium bowl, whisk together the buttermilk, egg, and melted butter.
  3. Add the whole wheat flour, all-purpose flour, sugar, baking powder, baking soda, and salt to the wet ingredients and mix until just combined.
  4. Spread the batter evenly in the prepared pan and top with fresh berries if desired, sprinkling with coarse sugar.
  5. Bake for 15-20 minutes until the pancakes are puffy and lightly golden, and the top springs back when pressed.
  6. Serve warm or at room temperature with your choice of toppings.
