Ingredients

The batter

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons canola oil
  • ¼ teaspoon pure vanilla extract

For serving

  • to taste butter or pure maple syrup, or other toppings

Instructions

  1. Preheat the oven to 200°F and heat a non-stick skillet or griddle over medium heat.
  2. In a medium bowl, stir together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, egg, canola oil, and vanilla.
  4. Mix the wet ingredients into the dry ingredients until just moistened; the batter should be lumpy.
  5. Grease the skillet and pour ¼ cup of batter onto it.
  6. Cook until bubbles form and edges are dry, then flip and cook until golden brown.
  7. Transfer cooked pancakes to the oven to keep warm until serving.
  8. Serve immediately with butter, maple syrup, or desired toppings.
