Instructions
- Preheat the oven to 200°F and heat a non-stick skillet or griddle over medium heat.
- In a medium bowl, stir together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, canola oil, and vanilla.
- Mix the wet ingredients into the dry ingredients until just moistened; the batter should be lumpy.
- Grease the skillet and pour ¼ cup of batter onto it.
- Cook until bubbles form and edges are dry, then flip and cook until golden brown.
- Transfer cooked pancakes to the oven to keep warm until serving.
- Serve immediately with butter, maple syrup, or desired toppings.
