Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter
  • ½ teaspoon vanilla extract
  • as needed spray or butter for greasing the pan

Instructions

  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a small bowl.
  2. In a medium bowl, whisk together buttermilk, egg yolk, melted butter, and vanilla.
  3. Add the flour mixture to the wet ingredients and stir until just combined.
  4. In a small bowl, beat the egg white until stiff peaks form.
  5. Fold the beaten egg white into the batter carefully.
  6. Heat a griddle or skillet and grease it lightly.
  7. Drop slightly heaping ⅓ cup of batter onto the cooking surface.
  8. Cook until bubbles form on the surface, then flip and cook until done.
  9. Serve with your favorite toppings.
