Instructions
- Whisk together flour, sugar, baking powder, baking soda, and salt in a small bowl.
- In a medium bowl, whisk together buttermilk, egg yolk, melted butter, and vanilla.
- Add the flour mixture to the wet ingredients and stir until just combined.
- In a small bowl, beat the egg white until stiff peaks form.
- Fold the beaten egg white into the batter carefully.
- Heat a griddle or skillet and grease it lightly.
- Drop slightly heaping ⅓ cup of batter onto the cooking surface.
- Cook until bubbles form on the surface, then flip and cook until done.
