Ingredients

Pancake Ingredients

  • ½ cup whole grain spelt flour
  • ½ tsp cinnamon
  • a pinch sea salt
  • ¼ tsp baking powder
  • 1 tbsp Amazing Grass Amazing Meal Chocolate protein powder (optional)
  • ¾ tsp vanilla
  • ¾ cup Almond Milk

Assembly Ingredients

  • 1 banana
  • to taste jam
  • to taste nut butter
  • 1 tsp syrup
  • to taste coconut

Instructions

  1. Preheat a skillet on medium heat and lightly coat it with oil.
  2. Mix the dry pancake ingredients in a bowl.
  3. Add the wet ingredients to the dry mix and whisk until well combined.
  4. Pour small amounts of the mixture onto the skillet to make tiny pancakes, about 3 inches wide.
  5. While pancakes are cooking, slice the banana and gather the jam, nut butter, syrup, and coconut.
  6. Assemble the pancakes by alternating layers of pancakes, banana slices, jam, and nut butter.
  7. Sprinkle with coconut and drizzle with a small amount of syrup.
