Instructions
- Preheat a skillet on medium heat and lightly coat it with oil.
- Mix the dry pancake ingredients in a bowl.
- Add the wet ingredients to the dry mix and whisk until well combined.
- Pour small amounts of the mixture onto the skillet to make tiny pancakes, about 3 inches wide.
- While pancakes are cooking, slice the banana and gather the jam, nut butter, syrup, and coconut.
- Assemble the pancakes by alternating layers of pancakes, banana slices, jam, and nut butter.
- Sprinkle with coconut and drizzle with a small amount of syrup.
