Ingredients

The pancakes

  • ½ cup whole grain spelt flour
  • ½ tsp cinnamon
  • a pinch sea salt
  • ¼ tsp baking powder
  • 1 tbsp Amazing Grass Amazing Meal Chocolate protein powder (optional)
  • ¾ tsp vanilla
  • ¾ cup Almond Milk

The syrup

  • 1 tbsp coconut oil, melted
  • 1 tbsp pure maple syrup

For assembly

  • 1 banana
  • to taste desired toppings (e.g., cacao nibs)

Instructions

  1. Preheat a skillet on medium heat and lightly coat with oil.
  2. Mix the dry ingredients in a bowl, then add the wet ingredients and whisk until well combined.
  3. Pour small amounts of the mixture onto the skillet to make tiny pancakes, no larger than about 3 inches in width.
  4. While the pancakes are cooking, slice a banana and set aside.
  5. Combine the syrup ingredients in a small bowl.
  6. Assemble the pancake sandwich by layering the pancakes with banana slices and adding desired toppings and syrup.
