Ingredients

The batter

  • cups all-purpose flour
  • 2 tablespoons cane sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground nutmeg
  • 1 cup mashed ripe banana
  • 1 large egg
  • cup milk
  • 2 tablespoons neutral oil or avocado oil
  • teaspoons vanilla extract

For serving

  • to taste maple syrup

Instructions

  1. Mix the dry ingredients in a large bowl.
  2. In a separate bowl, whisk together the wet ingredients.
  3. Combine the wet and dry ingredients, mixing until just combined.
  4. Heat a nonstick skillet and brush lightly with oil.
  5. Pour ⅓ cup of batter for each pancake into the skillet.
  6. Cook for 1 to 2 minutes on each side until golden brown.
  7. Serve with maple syrup.
