Ingredients

The batter

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons vegetable oil
  • 2 ripe bananas, mashed

For cooking and serving

  • 2 teaspoons butter
  • to taste sliced bananas
  • to taste maple syrup

Instructions

  1. Mix the dry ingredients (flour, sugar, baking powder, and salt) in a large bowl.
  2. Add the wet ingredients (egg, milk, vanilla, oil, and mashed bananas) and stir until combined.
  3. Melt butter on a non-stick griddle over medium heat.
  4. Pour ¼ cup of batter onto the griddle for each pancake.
  5. Cook until bubbles form on the surface, about 2 to 3 minutes, then flip and cook until golden, about 1 to 2 minutes more.
  6. Serve immediately with maple syrup and banana slices.
