Ingredients

Pancake Mix

  • cups all-purpose flour
  • 2 large eggs
  • 1 cup milk or water
  • ¼ cup sugar

Banana Filling

  • 3 tablespoons butter
  • 6 pieces ripe bananas

Other Ingredients

  • to taste unsalted butter for greasing
  • to taste berries of your choice for topping
  • to taste maple syrup

Instructions

  1. Mix the flour, eggs, milk (or water), and sugar in a bowl until smooth.
  2. In a pan, heat butter and cook the sliced bananas until softened.
  3. Grease a frying pan and pour in a portion of the batter, swirling to coat the surface.
  4. Cook until the bottom is golden, then flip and cook the other side until golden.
  5. Transfer the pancake to a plate, fill with banana filling, and fold.
  6. Top with berries and drizzle with maple syrup before serving.
