Banana Pancakes

Ingredients

The batter

  • cups all-purpose flour
  • 2 tablespoons cane sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground nutmeg
  • 1 cup mashed ripe banana
  • 1 large egg
  • cup milk
  • 2 tablespoons neutral oil or avocado oil
  • teaspoons vanilla extract

For cooking

  • as needed none more oil for brushing
  • as needed none maple syrup for serving

Instructions

  1. Combine the dry ingredients in a large bowl.
  2. In a separate medium bowl, whisk together the wet ingredients.
  3. Fold the wet mixture into the dry ingredients until just combined.
  4. Heat a nonstick skillet over medium-low and brush with oil.
  5. Pour ⅓ cup of batter for each pancake into the skillet and cook until bubbles form.
  6. Flip the pancakes and cook until golden brown on both sides.
  7. Serve warm with maple syrup.
