Ingredients

  • ¼ cup almond flour
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 4 large eggs
  • ½ banana mashed banana
  • 1 tsp vanilla extract

Instructions

  1. Mix almond flour, baking soda, cinnamon, and nutmeg in a medium bowl and set aside.
  2. In a separate bowl, whisk together eggs, mashed banana, and vanilla.
  3. Combine the egg mixture with the flour mixture and mix until smooth.
  4. Heat a greased skillet over medium heat and pour a little less than ¼ cup of batter onto the skillet.
  5. Cook for about 2 minutes on each side until golden brown, flipping when the surface is bubbly and edges are slightly dry.
  6. Serve immediately with maple syrup.
