Whole Wheat Pancakes

Ingredients

The batter

  • 2 cups white whole wheat flour
  • tsp baking powder
  • ½ tsp kosher salt
  • 2 tsp ground cinnamon
  • 2 tsp sugar
  • 2 large eggs
  • 2 cups + 2 tbsp fat free milk
  • 2 tsp vanilla extract

For cooking

  • as needed none cooking spray

Instructions

  1. Mix all dry ingredients in a bowl.
  2. Add wet ingredients to the mixing bowl and mix until there are no more dry spots; avoid over-mixing.
  3. Heat a large skillet on medium heat and lightly spray with oil.
  4. Pour ¼ cup of pancake batter onto the skillet.
  5. When the pancake starts to bubble, you may add fruit if desired.
  6. When the bubbles settle and the edges begin to set, flip the pancake.
  7. Repeat with the remaining batter.
