Instructions
- Combine the flour, oats, salt, baking powder, and cinnamon in a large bowl.
- In another bowl, whisk together the egg and milk, then add the brown sugar and yogurt, mixing until smooth.
- Stir in the vanilla extract, then combine the wet and dry ingredients, folding in any optional mix-ins.
- Heat a griddle or skillet over medium heat and grease it with butter or cooking spray.
- Pour about ¼ cup of batter onto the griddle and cook until bubbles form, then flip and cook until golden brown.
- Keep cooked pancakes warm in a low oven while you finish the remaining batter.
- Serve warm with your choice of toppings.
