Ingredients

The batter

  • 1 cup whole wheat flour or white whole-wheat flour
  • ½ cup old-fashioned whole rolled oats or quick oats
  • ¼ teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 large egg or 2 egg whites
  • 1 cup milk
  • 2 tablespoons packed light or dark brown sugar
  • ¼ cup Greek yogurt
  • 1 teaspoon pure vanilla extract

Optional add-ins

  • ½ cup chocolate chips or fruit

Instructions

  1. Combine the flour, oats, salt, baking powder, and cinnamon in a large bowl.
  2. In another bowl, whisk together the egg and milk, then add the brown sugar and yogurt, mixing until smooth.
  3. Stir in the vanilla extract, then combine the wet and dry ingredients, folding in any optional mix-ins.
  4. Heat a griddle or skillet over medium heat and grease it with butter or cooking spray.
  5. Pour about ¼ cup of batter onto the griddle and cook until bubbles form, then flip and cook until golden brown.
  6. Keep cooked pancakes warm in a low oven while you finish the remaining batter.
  7. Serve warm with your choice of toppings.
