Ingredients

  • ½ cup quick-cooking oats
  • ½ cup whole wheat flour
  • ½ cup all-purpose flour
  • ½ teaspoon table salt
  • ¾ teaspoon baking soda
  • cup packed brown sugar
  • ½ teaspoon ground cinnamon (optional)
  • 1 whole egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil, melted
  • 1 cup buttermilk or plain kefir

Instructions

  1. Preheat a griddle to medium heat.
  2. In a medium bowl, whisk together the oats, flours, salt, sugar, and cinnamon.
  3. In a small bowl, whisk together the egg, vanilla, melted coconut oil, and buttermilk.
  4. Add the liquid mixture to the dry ingredients and mix until just combined.
  5. Drop by ¼ cup onto the hot griddle.
  6. Cook until the edges are firm and bubbles start forming holes, then flip the pancakes.
  7. Cook until golden brown on the other side.
  8. Serve immediately with your favorite pancake toppings.
