Ingredients

  • 2 cups whole wheat flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 and ⅓ cups milk
  • 5 ounces vanilla Greek yogurt
  • ¼ cup melted butter
  • 1 large egg
  • ½ teaspoon vanilla extract

Instructions

  1. Whisk together all dry ingredients in a large bowl.
  2. In a separate bowl, mix the milk and Greek yogurt to thin the yogurt, then add the beaten egg and vanilla extract.
  3. Combine the wet mixture with the dry ingredients and stir in the melted butter until just combined.
  4. Heat a skillet over medium heat and lightly grease it.
  5. Use a ⅓ cup measure to pour pancakes onto the skillet and cook until bubbles form on the surface.
  6. Flip the pancakes and cook until golden brown.
  7. Keep pancakes warm in a 180°F oven until ready to serve.
