Ingredients

  • ¾ cup rolled oats
  • ¾ cup Greek yogurt
  • 1 large egg
  • 2 large egg whites
  • tablespoons maple syrup
  • ½ teaspoon baking powder
  • 1 teaspoon vinegar (white or apple)

Instructions

  1. 1. Blend all the batter ingredients in a high-speed blender or food processor until smooth.
  2. 2. If the batter is too thick, add some water to thin it out.
  3. 3. Heat oil in a non-stick skillet over medium heat.
  4. 4. Drop spoonfuls of the pancake batter onto the skillet and cover with a lid.
  5. 5. Cook for 2-3 minutes, then flip and cook for another minute.
  6. 6. Serve the pancakes immediately.
