  • 3 small eggs
  • cup Greek yogurt
  • ¼ teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1 tablespoon coconut oil

Instructions

  1. Blend the oats until they reach a flour texture.
  2. Add the remaining ingredients and blend until smooth.
  3. Heat a non-stick skillet over medium-high heat and add oil.
  4. Pour ¼ cup of batter onto the skillet and cook until bubbles appear on the surface.
  5. Flip the pancake and cook for another minute.
  6. Repeat until all batter is used.
