Instructions
- Blend the eggs, banana, protein powder, oats, maple syrup, olive oil, baking powder, vanilla extract, and salt until smooth.
- Let the batter rest while heating a skillet over medium heat.
- Grease the skillet and pour ¼ cup of batter for each pancake, spreading it out if necessary.
- Cook until bubbles form on the surface, about 2 to 3 minutes, then flip and cook for another 2 minutes.
- Repeat with the remaining batter to make about 8 pancakes.
- Serve warm with your favorite toppings.
