Instructions
- Mix the dry ingredients in a large bowl.
- Whisk in the eggs, almond milk, melted coconut oil, and vanilla.
- Beat the egg whites until soft peaks form and set aside.
- Gently fold the egg whites into the batter.
- Heat a skillet over medium-low heat and grease it with coconut oil.
- Pour about 3 tablespoons of batter per pancake into the skillet.
- Cook until light golden brown, then flip and cook until golden on the other side.
