Instructions
- Combine milk and vinegar in a measuring cup and let it rest until lightly curdled.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Add egg, melted butter, maple syrup, and vanilla to the buttermilk mixture and whisk until blended.
- Pour the liquid mixture into the flour mixture and stir until just combined, then let the batter rest for 5 minutes.
- Preheat a skillet over medium-low heat, adding oil if necessary.
- Scoop batter onto the skillet and cook until bubbles form, then flip and cook until golden on both sides.
- Repeat with remaining batter and serve immediately with desired toppings.
