Ingredients

  • 1 cup milk of choice
  • 1 tablespoon apple cider vinegar or distilled white vinegar
  • 1 cup white whole wheat flour or regular whole wheat flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon pure vanilla extract

Instructions

  1. Combine milk and vinegar in a measuring cup and let it rest until lightly curdled.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. Add egg, melted butter, maple syrup, and vanilla to the buttermilk mixture and whisk until blended.
  4. Pour the liquid mixture into the flour mixture and stir until just combined, then let the batter rest for 5 minutes.
  5. Preheat a skillet over medium-low heat, adding oil if necessary.
  6. Scoop batter onto the skillet and cook until bubbles form, then flip and cook until golden on both sides.
  7. Repeat with remaining batter and serve immediately with desired toppings.
