Instructions
- Whisk together the flour, sugar, baking powder, baking soda, and salt in a bowl.
- In a separate bowl, mix the buttermilk, vegetable oil, and eggs.
- Make a well in the center of the dry ingredients and pour in the wet mixture.
- Whisk until smooth, adding more liquid only if necessary.
- Heat oil in a nonstick skillet or griddle over medium heat until shimmering.
- Pour ¼ cup of batter for each pancake into the pan, spreading gently if needed.
- Cook until the edges are set and bubbles form on the surface, then flip and cook until golden brown on the other side.
- Serve with butter and maple syrup or other desired toppings.
