Instructions
- 1. Whisk together the flour, baking powder, baking soda, and salt in a large bowl.
- 2. Make a well in the center and add the buttermilk, eggs, honey, and vanilla. Stir until combined.
- 3. Heat a griddle or skillet over medium-high heat and coat with butter.
- 4. Pour pancake batter onto the skillet using a ladle.
- 5. Cook until the pancakes are golden brown on the bottom and bubbly on top, then flip to cook the other side.
- 6. Serve with maple syrup and fresh fruit, and freeze leftovers if desired.
