Ingredients

Dry Ingredients

  • 1 cup whole wheat flour
  • tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Wet Ingredients

  • 2 very ripe bananas
  • 2 large eggs
  • 1 cup buttermilk
  • ½ tsp pure vanilla extract

Add-ins

  • 1 oz pecans, chopped

Optional Garnish

  • to taste plain yogurt
  • to taste banana slices
  • to taste pecans
  • to taste unpasteurized honey

Instructions

  1. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  2. In another bowl, mash the bananas and whisk in the buttermilk, eggs, and vanilla.
  3. Combine the dry ingredients with the wet ingredients and whisk until well mixed.
  4. Fold in the chopped pecans.
  5. Heat a little oil in a non-stick pan over moderate heat.
  6. Drop ¼ cup measures of batter onto the pan to form pancakes.
  7. Cook until bubbles appear on the surface and the undersides are golden brown, about 30 seconds.
  8. Flip the pancakes and cook until the undersides are golden brown and cooked through, about 30 seconds.
  9. Serve garnished with yogurt, banana slices, chopped pecans, and honey or maple syrup if desired.
