Instructions
- Whisk together the flour, baking powder, baking soda, and salt in a bowl.
- In another bowl, mash the bananas and whisk in the buttermilk, eggs, and vanilla.
- Combine the dry ingredients with the wet ingredients and whisk until well mixed.
- Fold in the chopped pecans.
- Heat a little oil in a non-stick pan over moderate heat.
- Drop ¼ cup measures of batter onto the pan to form pancakes.
- Cook until bubbles appear on the surface and the undersides are golden brown, about 30 seconds.
- Flip the pancakes and cook until the undersides are golden brown and cooked through, about 30 seconds.
- Serve garnished with yogurt, banana slices, chopped pecans, and honey or maple syrup if desired.
