Ingredients

Pancake Ingredients

  • 1 cup whole wheat white flour or all-purpose flour
  • 1 Tbsp. granulated sugar
  • 1 Tbsp. brown sugar
  • 2 tsp. baking powder
  • ½ tsp. ground cinnamon
  • a pinch ground nutmeg
  • a pinch ground ginger
  • ¼ tsp. sea salt
  • 1 cup buttermilk
  • 2 Tbsp. melted butter or coconut oil
  • 1 large egg
  • 1 cup mashed ripe bananas (about 2 small bananas)

Optional Topping Ingredients

  • maple syrup
  • butter
  • toasted walnuts or pecans
  • extra banana slices

Instructions

  1. In a large bowl, whisk together the dry ingredients.
  2. In a separate bowl, whisk together the wet ingredients.
  3. Combine the wet and dry mixtures, stirring until just combined.
  4. Heat a skillet or griddle and mist with cooking spray.
  5. Pour about ¼ cup of batter onto the skillet and cook until bubbles form.
  6. Flip the pancake and cook until golden brown.
  7. Repeat with the remaining batter.
  8. Serve warm with desired toppings.
