Banana Pancakes

Instructions
- Mash the bananas in a bowl until chunky or smooth as preferred.
- In a large bowl, whisk together flour, salt, sugar, baking powder, baking soda, and nutmeg.
- Whisk the eggs, buttermilk, and vanilla into the mashed bananas until thoroughly mixed.
- If fluffy pancakes are desired, separate the egg whites and beat until soft peaks form.
- Fold the egg whites into the batter gently, mixing as little as possible.
- Heat a lightly oiled pan over medium-high heat.
- Scoop about ¼ cup of batter onto the pan and flatten gently.
- Cook until bubbles appear on the surface and edges brown, about 2-3 minutes.
- Flip and cook the other side until golden brown, about 1-2 minutes.
- Repeat until all batter is used and serve immediately with syrup or butter.
