Banana Pancakes

Ingredients

  • 2 medium bananas, mashed
  • 2 cups flour
  • ¾ teaspoon salt
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ - ½ teaspoon grated nutmeg (optional)
  • 2 large eggs, yolks and whites separated
  • ½ teaspoon vanilla extract
  • cups buttermilk
  • ¼ cup melted butter
  • as needed for frying melted butter or oil

Instructions

  1. Mash the bananas in a bowl until chunky or smooth as preferred.
  2. In a large bowl, whisk together flour, salt, sugar, baking powder, baking soda, and nutmeg.
  3. Whisk the eggs, buttermilk, and vanilla into the mashed bananas until thoroughly mixed.
  4. If fluffy pancakes are desired, separate the egg whites and beat until soft peaks form.
  5. Fold the egg whites into the batter gently, mixing as little as possible.
  6. Heat a lightly oiled pan over medium-high heat.
  7. Scoop about ¼ cup of batter onto the pan and flatten gently.
  8. Cook until bubbles appear on the surface and edges brown, about 2-3 minutes.
  9. Flip and cook the other side until golden brown, about 1-2 minutes.
  10. Repeat until all batter is used and serve immediately with syrup or butter.
