Ingredients

The pancakes

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ¾ cup buttermilk
  • ¼ cup sour cream
  • 3 Tbsp granulated sugar
  • 3 Tbsp packed brown sugar
  • cups mashed overripe bananas
  • 1 large egg
  • ½ tsp vanilla extract
  • 4 Tbsp unsalted butter, melted

The glaze

  • 4 oz cream cheese, softened
  • 4 Tbsp butter, softened
  • cups powdered sugar
  • 6 Tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat an electric griddle to 350°F or use a non-stick pan on the stovetop.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the buttermilk, sour cream, sugars, mashed bananas, egg, vanilla, and melted butter.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined; the batter will be slightly lumpy.
  5. Butter the griddle and pour a heaping ⅓ cup of batter onto it, spreading it slightly.
  6. Cook until the bottom is golden brown, then flip and cook until the other side is golden brown.
  7. Serve warm with the cream cheese glaze.
  8. To make the glaze, blend cream cheese and butter until fluffy, then add powdered sugar, milk, and vanilla, mixing until well combined.
