Favorite Fluffy Whole Wheat Pancakes

Ingredients

  • 3 tbsp melted unsalted butter (or non-dairy buttery spread)
  • 1 ½ cups whole wheat pastry flour
  • 3 ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon (optional)
  • 1 tbsp sugar or maple syrup
  • 1 ¼ cups milk (unsweetened vanilla almond recommended)
  • 1 large egg

Instructions

  1. Melt the butter in the microwave and set aside to cool.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and sugar.
  3. In a measuring cup, combine the milk, egg, and melted butter, whisking until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix gently to combine, leaving lumps.
  5. Heat a skillet over medium heat and add a pat of butter or oil.
  6. Pour ⅓ cup of batter onto the skillet and cook for 2-3 minutes per side, flipping when bubbles form.
  7. Serve warm with maple syrup.
