Ingredients

The batter

  • 2 cups whole-wheat flour
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 tablespoon honey
  • 2 large eggs (lightly beaten)
  • 1 ¾ cups milk
  • 2 tablespoons butter (unsalted, melted)
  • 2 medium bananas (mashed)

For frying and serving

  • to taste butter or coconut oil (for frying)
  • to taste pure maple syrup (for serving)

Instructions

  1. Whisk together the dry ingredients in a large bowl.
  2. Make a well in the center and add honey, eggs, milk, and melted butter; whisk together without overmixing.
  3. Gently fold in the mashed bananas.
  4. Heat a griddle or pan over medium-high heat and coat with butter.
  5. Pour batter onto the griddle and cook until golden brown, then flip to cook the other side.
  6. Serve with warm maple syrup and fresh fruit, and freeze leftovers if desired.
