Ingredients

The batter

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ¾ cup ripe banana, mashed
  • 1 large egg
  • ¾ cup milk

For serving

  • to taste banana slices
  • to taste maple syrup

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
  2. In a larger bowl, beat the mashed banana and egg together until blended.
  3. Whisk in the milk until combined, then add the dry ingredients and mix until slightly lumpy.
  4. Heat a large nonstick pan over medium heat and spray with nonstick cooking spray.
  5. Using a ⅓-cup measuring cup, pour 3-4 circles of batter into the pan.
  6. Cook until the pancakes are puffed on top and golden brown on the bottom, about 2-3 minutes, then flip and cook for another 1-2 minutes.
  7. Serve with banana slices and maple syrup.
