Healthy Banana Pancakes

Ingredients

  • cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ½ cup mashed banana
  • 2 tablespoons melted coconut oil or butter
  • 2 tablespoons packed brown sugar
  • ¼ cup Greek yogurt
  • 1 teaspoon pure vanilla extract
  • ½ cup optional add-ins (chocolate chips, chopped walnuts, etc.)

Instructions

  1. Whisk together the dry ingredients in a large bowl.
  2. In another bowl, whisk the wet ingredients until combined.
  3. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  4. Heat a griddle or skillet over medium heat and coat with butter or nonstick spray.
  5. Pour a heaping ¼ cup of batter onto the griddle and cook until edges are set and holes form on the surface.
  6. Flip the pancake and cook until done, about 1-2 more minutes.
  7. Keep pancakes warm in a low oven until all are cooked.
  8. Serve immediately with desired toppings.
