Apple Cinnamon Pancakes

Ingredients

  • cup peeled and chopped apples
  • 1 large egg
  • 1 5.3 oz container vanilla nonfat Greek yogurt
  • 1 tablespoon honey
  • 2 tablespoons unsweetened applesauce
  • ½ cup white whole wheat flour
  • 1 teaspoon baking powder
  • ¼ teaspoon cinnamon

Instructions

  1. Microwave the chopped apples for about a minute until softened.
  2. In a bowl, mix the egg, yogurt, honey, and applesauce until smooth.
  3. Add the flour, baking powder, and cinnamon, and mix until smooth.
  4. Gently fold in the microwaved apples.
  5. Heat a griddle pan and mist with cooking spray.
  6. Scoop a scant ¼ cup of batter onto the pan and flatten it slightly.
  7. Cook for 2-4 minutes until golden, then flip and cook for another 1-2 minutes.
  8. Repeat until all batter is used to make 6 pancakes.
