Apple Cinnamon Pancakes

white whole wheat flour

Instructions
- Microwave the chopped apples for about a minute until softened.
- In a bowl, mix the egg, yogurt, honey, and applesauce until smooth.
- Add the flour, baking powder, and cinnamon, and mix until smooth.
- Gently fold in the microwaved apples.
- Heat a griddle pan and mist with cooking spray.
- Scoop a scant ¼ cup of batter onto the pan and flatten it slightly.
- Cook for 2-4 minutes until golden, then flip and cook for another 1-2 minutes.
- Repeat until all batter is used to make 6 pancakes.
