Ingredients

The sauce

  • 1 package Passage Foods Pad Thai Sauce

The vegetables

  • 1 tablespoon avocado oil
  • ½ medium yellow onion, sliced thin
  • 1 medium red pepper, sliced
  • ½ cup carrots, sliced
  • 4 stalks green onions, sliced
  • to taste salt and pepper
  • 1 teaspoon minced garlic
  • ¼ teaspoon red pepper flakes

The main ingredients

  • 1 medium spaghetti squash
  • 3 large eggs, beaten
  • ½ cup peanuts, chopped fine
  • ¼ cup fresh cilantro, chopped
  • to taste Sriracha, for serving

Instructions

  1. 1. Whisk together the eggs in a bowl.
  2. 2. Heat avocado oil in a skillet over medium heat.
  3. 3. Add onion, red pepper, carrots, and green onions; season with salt and pepper.
  4. 4. Cook for 5 minutes until vegetables are slightly softened.
  5. 5. Add garlic and red pepper flakes; cook for an additional 30 seconds.
  6. 6. Remove the vegetables from heat and transfer to a plate.
  7. 7. Add more oil to the skillet if necessary and warm the spaghetti squash for 2 minutes.
  8. 8. Add the beaten eggs and cook, stirring constantly, until set (about 2 minutes).
  9. 9. Stir in the Pad Thai sauce and bring to a boil; cook until the sauce thickens.
  10. 10. Remove from heat and stir in cilantro and peanuts.
  11. 11. Serve with a drizzle of Sriracha if desired.
