Instructions
- 1. Whisk together the eggs in a bowl.
- 2. Heat avocado oil in a skillet over medium heat.
- 3. Add onion, red pepper, carrots, and green onions; season with salt and pepper.
- 4. Cook for 5 minutes until vegetables are slightly softened.
- 5. Add garlic and red pepper flakes; cook for an additional 30 seconds.
- 6. Remove the vegetables from heat and transfer to a plate.
- 7. Add more oil to the skillet if necessary and warm the spaghetti squash for 2 minutes.
- 8. Add the beaten eggs and cook, stirring constantly, until set (about 2 minutes).
- 9. Stir in the Pad Thai sauce and bring to a boil; cook until the sauce thickens.
- 10. Remove from heat and stir in cilantro and peanuts.
- 11. Serve with a drizzle of Sriracha if desired.
