Ingredients

Main Ingredients

  • 1 batch Sunshine Sauce
  • 2 large eggs
  • 2 teaspoons coconut aminos
  • 2 teaspoons coconut oil
  • 1/2 medium onion
  • 1 cup snap peas
  • 2 cups roasted spaghetti squash
  • 6–8 ounces grilled chicken

Sunshine Sauce Ingredients

  • 2 tablespoons lime juice
  • 1 clove garlic
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon coconut aminos
  • 1/4 teaspoon powdered ginger
  • 1/2 teaspoon rice vinegar
  • 1/4 cup sunflower butter
  • 1/4 cup coconut milk
  • dash cayenne pepper (optional)

Instructions

  1. Scramble the eggs with coconut aminos and cook in a skillet until set.
  2. Remove the eggs and cut them into strips.
  3. Sauté onion and snap peas in the same skillet until crisp-tender.
  4. Add spaghetti squash, chicken, and cooked egg to the skillet and heat through.
  5. Stir in the Sunshine Sauce and mix well.
  6. Serve with optional garnishes.
