Beef Enchiladas

Instructions
- Preheat the oven to 350°F and prepare a baking pan with cooking spray.
- Heat the vegetable oil in a large pan over medium-high heat and cook the ground beef, breaking it into small pieces.
- Add the onion and cook until softened, then add the garlic and cook briefly.
- Stir in the taco seasoning and a tablespoon of water until the beef is well coated.
- Spread 1 cup of enchilada sauce in the bottom of the baking pan.
- Warm the tortillas until pliable, then fill each with cheese and beef mixture, rolling them tightly.
- Place the rolled tortillas in the baking dish, pour 1 cup of enchilada sauce over them, and sprinkle with remaining cheese.
- Bake for 20 minutes until the cheese is melted and the sauce is bubbling.
- Top with olives and green onions before serving.
