Beef Enchiladas

Ingredients

The filling

  • 2 teaspoons vegetable oil
  • 1 ½ pounds ground beef
  • ½ cup onion
  • 1 teaspoon minced garlic
  • 1 packet taco seasoning

The assembly

  • 2 10 ounce cans red enchilada sauce
  • 2 ½ cups shredded cheddar cheese
  • 10 pieces flour tortillas
  • ½ cup sliced black olives
  • ¼ cup sliced green onions
  • as needed spray cooking spray

Instructions

  1. Preheat the oven to 350°F and prepare a baking pan with cooking spray.
  2. Heat the vegetable oil in a large pan over medium-high heat and cook the ground beef, breaking it into small pieces.
  3. Add the onion and cook until softened, then add the garlic and cook briefly.
  4. Stir in the taco seasoning and a tablespoon of water until the beef is well coated.
  5. Spread 1 cup of enchilada sauce in the bottom of the baking pan.
  6. Warm the tortillas until pliable, then fill each with cheese and beef mixture, rolling them tightly.
  7. Place the rolled tortillas in the baking dish, pour 1 cup of enchilada sauce over them, and sprinkle with remaining cheese.
  8. Bake for 20 minutes until the cheese is melted and the sauce is bubbling.
  9. Top with olives and green onions before serving.
