Ingredients

The Corned Beef

  • 3-4 pounds corned beef brisket
  • 2-3 cups chicken broth
  • 2-3 cloves garlic
  • ½ onion sliced

The Sandwich

  • 1-2 tablespoons sauerkraut
  • 1 tablespoon thousand island dressing
  • 2 slices swiss cheese
  • sliced pieces rye bread

Instructions

  1. Step 1: Place the trivet in the Instant Pot.
  2. Step 2: Add the corned beef, chicken broth, onions, and garlic to the pot.
  3. Step 3: Seal the lid and cook on Manual High-Pressure for 90 minutes.
  4. Step 4: Allow the steam to release naturally for 10 minutes before releasing the remaining steam.
  5. Step 5: Remove the beef and shred it with two forks.
  6. Step 6: Toast the rye bread, adding Swiss cheese on top of one slice to melt.
  7. Step 7: Layer the shredded corned beef and sauerkraut on the cheese slice.
  8. Step 8: Spread thousand island dressing on the other slice of bread and top the sandwich.
  9. Step 9: Serve the sandwich.
