Instructions
- Step 1: Place the trivet in the Instant Pot.
- Step 2: Add the corned beef, chicken broth, onions, and garlic to the pot.
- Step 3: Seal the lid and cook on Manual High-Pressure for 90 minutes.
- Step 4: Allow the steam to release naturally for 10 minutes before releasing the remaining steam.
- Step 5: Remove the beef and shred it with two forks.
- Step 6: Toast the rye bread, adding Swiss cheese on top of one slice to melt.
- Step 7: Layer the shredded corned beef and sauerkraut on the cheese slice.
- Step 8: Spread thousand island dressing on the other slice of bread and top the sandwich.
- Step 9: Serve the sandwich.
