Ingredients

The main dish

  • 4 lb Corned beef brisket
  • 2 cups Beef bone broth
  • 1 large head Cabbage
  • 2 large Onions
  • 1 lb Celery root
  • to taste Sea salt
  • to taste Black pepper

Horseradish sauce

  • ¾ cup Sour cream
  • ½ cup Mayonnaise
  • ¼ cup Prepared horseradish
  • 2 tsp Lemon juice
  • ½ tsp Garlic powder

Instructions

  1. Rinse the corned beef under cold water and pat dry.
  2. Trim excess fat from the brisket if desired, leaving about ¼ inch for flavor.
  3. Place the brisket in the pressure cooker and sprinkle the seasoning from the packet over it.
  4. Pour the beef bone broth around the brisket without disturbing the seasonings.
  5. Seal the pressure cooker and set to cook for 1 hour and 15 minutes.
  6. While cooking, mix the horseradish sauce ingredients and chill in the fridge.
  7. After cooking, add onions, celery root, and cabbage to the cooker, seasoning lightly with salt and pepper.
  8. Cover and cook on high pressure for an additional 15 minutes.
  9. Release pressure and slice the corned beef against the grain.
  10. Serve the corned beef with cabbage, celery root, and horseradish sauce.
