Instructions
- Rinse the corned beef under cold water and pat dry.
- Trim excess fat from the brisket if desired, leaving about ¼ inch for flavor.
- Place the brisket in the pressure cooker and sprinkle the seasoning from the packet over it.
- Pour the beef bone broth around the brisket without disturbing the seasonings.
- Seal the pressure cooker and set to cook for 1 hour and 15 minutes.
- While cooking, mix the horseradish sauce ingredients and chill in the fridge.
- After cooking, add onions, celery root, and cabbage to the cooker, seasoning lightly with salt and pepper.
- Cover and cook on high pressure for an additional 15 minutes.
- Release pressure and slice the corned beef against the grain.
- Serve the corned beef with cabbage, celery root, and horseradish sauce.
