Ingredients

The main ingredients

  • 3-4 pounds corned beef brisket
  • ½ pound small potatoes
  • 3 pieces carrots
  • 1 unit yellow onion
  • ½ head cabbage
  • 2 to 12 beers
  • 6 sprigs fresh thyme
  • 1 tablespoon pickling spice

The sauce

  • ½ cup sour cream
  • 3-4 tablespoons prepared horseradish

Instructions

  1. 1. Place carrots, onion, and potatoes in the slow cooker.
  2. 2. Put the corned beef on top of the vegetables and sprinkle with pickling spice.
  3. 3. Pour the beers over the vegetables and brisket, then add fresh thyme.
  4. 4. Cover and cook on high for 5-6 hours or low for 10-12 hours until beef is tender.
  5. 5. Add cabbage on top of corned beef, cover, and cook for an additional 45 minutes to 1 hour.
  6. 6. Slice the corned beef against the grain and serve with vegetables and cooking liquid.
  7. 7. For the horseradish sauce, mix sour cream and horseradish together and refrigerate.
