Crockpot Corned Beef and Cabbage

Instructions
- 1. Place carrots, onion, and potatoes in the slow cooker.
- 2. Put the corned beef on top of the vegetables and sprinkle with pickling spice.
- 3. Pour the beers over the vegetables and brisket, then add fresh thyme.
- 4. Cover and cook on high for 5-6 hours or low for 10-12 hours until beef is tender.
- 5. Add cabbage on top of corned beef, cover, and cook for an additional 45 minutes to 1 hour.
- 6. Slice the corned beef against the grain and serve with vegetables and cooking liquid.
- 7. For the horseradish sauce, mix sour cream and horseradish together and refrigerate.
