Yuzu Marmalade

Ingredients

  • 6 pieces yuzu citrus fruits
  • ¾ cups granulated sugar
  • 3 tablespoons yuzu juice

Instructions

  1. Cut the yuzu fruit in half and remove the segments and seeds.
  2. Soak the skins in water for at least 30 minutes.
  3. Drain the soaking water and scrape the white part of the yuzu skin out with a spoon.
  4. Slice the yuzu skin into roughly 0.2 inch (5mm) thick pieces.
  5. Boil water in a saucepan and simmer the yuzu skins for a few minutes, repeating this process two more times.
  6. Drain the yuzu peel and put it in a small saucepan with the sugar, seeds, and yuzu juice over medium heat.
  7. Cook over low to medium heat until the liquid reduces and thickens, then remove the seeds.
  8. Pour it into a prepared preserving jar.
