Ingredients

The base

  • 1 ¼ cups pineapple juice or orange juice
  • 2 cups water
  • 3 tablespoons honey (or maple syrup for vegan option)
  • 6 to 8 ounces spiced rum and/or whiskey
  • 8 ounces ginger ale or sparkling water with ginger bitters

The spices

  • 2 sticks cinnamon
  • ½ teaspoon ground nutmeg
  • pinch cinnamon (or 1 teaspoon ground cinnamon)

Garnishes

  • to taste orange peel or slices
  • to taste star anise or whole cloves

Optional mix-ins

  • ½ teaspoon pure vanilla extract
  • 4 ounces non-dairy cream or 2 tablespoons butter (warmed)

Instructions

  1. Combine pineapple juice, water, honey, ginger ale, and alcohol in a pot and simmer for 2 minutes until honey dissolves.
  2. Add cinnamon sticks and remaining spices, then simmer for another 5 minutes.
  3. If using, mix in cream, butter, or vanilla extract and heat until smooth.
  4. Pour into glasses and garnish with star anise, orange slices, and a sprinkle of cinnamon.
