Sausage Stuffed Spaghetti Squash

Ingredients

The squash

  • 1 each spaghetti squash

The filling

  • ½ lb Italian ground sausage
  • ½ cup shredded mozzarella
  • ¼ cup Parmesan cheese
  • ½ Tbsp olive oil

Instructions

  1. Preheat the oven to 400°F and prepare a baking rack in the center.
  2. Slice the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the inside of each half with olive oil.
  4. Divide the Italian sausage evenly between the two squash halves.
  5. Roast the squash for 30 to 40 minutes until the sausage reaches an internal temperature of 160°F.
  6. Remove from the oven and use forks to separate the sausage into chunks and the squash into strands, mixing them together.
  7. Combine the mozzarella and Parmesan cheese, and optionally add red pepper flakes.
  8. Top the squash with the cheese mixture and roast for an additional 5 to 10 minutes until the cheese is bubbly and caramelized.
