Sausage Stuffed Spaghetti Squash

Instructions
- Preheat the oven to 400°F and prepare a baking rack in the center.
- Slice the spaghetti squash in half lengthwise and scoop out the seeds.
- Brush the inside of each half with olive oil.
- Divide the Italian sausage evenly between the two squash halves.
- Roast the squash for 30 to 40 minutes until the sausage reaches an internal temperature of 160°F.
- Remove from the oven and use forks to separate the sausage into chunks and the squash into strands, mixing them together.
- Combine the mozzarella and Parmesan cheese, and optionally add red pepper flakes.
- Top the squash with the cheese mixture and roast for an additional 5 to 10 minutes until the cheese is bubbly and caramelized.
