Instructions
- Cook the spaghetti squash whole in the microwave with pricked holes and water for about 20 minutes until soft.
- Grill the Italian sausage and mini peppers on medium-high heat until charred.
- Heat the marinara sauce in a saucepan simultaneously.
- Once the squash is cooked, cut it in half, remove the seeds, and shred the flesh into noodle-like strands.
- Plate the shredded squash, add marinara, and top with chopped sausage and peppers.
- Serve with grated parmesan and optionally a side of arugula salad with oil/vinegar.
