Spaghetti Squash with Grilled Italian Sausage and Peppers

Ingredients

  • 1 whole spaghetti squash
  • 1 large jar marinara sauce
  • 1 package Italian sausage
  • 6–8 pieces mini peppers
  • to taste arugula (optional)
  • to taste olive oil/vinegar
  • to taste parmesan cheese

Instructions

  1. Cook the spaghetti squash whole in the microwave with pricked holes and water for about 20 minutes until soft.
  2. Grill the Italian sausage and mini peppers on medium-high heat until charred.
  3. Heat the marinara sauce in a saucepan simultaneously.
  4. Once the squash is cooked, cut it in half, remove the seeds, and shred the flesh into noodle-like strands.
  5. Plate the shredded squash, add marinara, and top with chopped sausage and peppers.
  6. Serve with grated parmesan and optionally a side of arugula salad with oil/vinegar.
