Ingredients

The soup base

  • 1 Tbsp olive oil
  • 4 cloves garlic
  • 1 medium yellow onion
  • 2 medium carrots
  • 1 bunch kale
  • 1 breast rotisserie chicken
  • 5 cups chicken broth
  • ¼ tsp nutmeg
  • ½ tsp dried basil
  • to taste freshly cracked black pepper
  • 1 pinch crushed red pepper (optional)

The creamy addition

  • 1 lb gnocchi
  • ½ cup half and half or cream (optional)

Instructions

  1. Sauté diced onion and minced garlic in olive oil until soft.
  2. Add sliced carrots and continue to sauté until they begin to soften.
  3. Prepare the kale by removing stems and slicing leaves, then rinse and add to the pot until wilted.
  4. Chop or shred the chicken and add it along with broth, nutmeg, basil, pepper, and red pepper flakes.
  5. Bring the mixture to a boil and then add the gnocchi, simmering until tender.
  6. Turn off the heat and stir in half and half or cream if desired, adjusting seasoning as needed.
