Breakfast Burrito Casserole

Ingredients

  • 1 tbsp grass-fed butter (or ghee or coconut oil for dairy free)
  • 1 lb ground breakfast sausage (or chorizo)
  • 1 lb potatoes, cut into small cubes
  • 1 each bell pepper, diced
  • 1 each onion, diced
  • 12 each eggs
  • 1 cup salsa
  • ¼ cup cilantro, chopped (plus more for garnish)
  • to taste salt and pepper
  • 2 each avocados, sliced

Instructions

  1. Preheat the oven to 375°F and grease a 9x13 baking dish.
  2. In a large pan over medium heat, cook the sausage until browned, about 7-8 minutes, then set aside.
  3. In the same pan, add the potatoes, season with salt and pepper, and cook for about 8-10 minutes until they start to soften.
  4. Add the onions and bell pepper to the pan and continue cooking until tender, about 5-6 minutes.
  5. In a large bowl, crack the eggs and whisk with salt, pepper, and salsa.
  6. Add the cooked sausage, potatoes, bell pepper, onion, and chopped cilantro to the egg mixture and stir to combine.
  7. Pour the mixture into the prepared baking dish and bake for 30-40 minutes, or until the eggs are set.
  8. Serve topped with sliced avocados.
