Breakfast Burrito Casserole

Instructions
- Preheat the oven to 375°F and grease a 9x13 baking dish.
- In a large pan over medium heat, cook the sausage until browned, about 7-8 minutes, then set aside.
- In the same pan, add the potatoes, season with salt and pepper, and cook for about 8-10 minutes until they start to soften.
- Add the onions and bell pepper to the pan and continue cooking until tender, about 5-6 minutes.
- In a large bowl, crack the eggs and whisk with salt, pepper, and salsa.
- Add the cooked sausage, potatoes, bell pepper, onion, and chopped cilantro to the egg mixture and stir to combine.
- Pour the mixture into the prepared baking dish and bake for 30-40 minutes, or until the eggs are set.
- Serve topped with sliced avocados.
