Ingredients

The pasta

  • 1 pound pasta

The sauce

  • 4 tablespoons butter
  • 3 ears sweet corn, kernels removed from the cob
  • to taste none kosher salt and pepper
  • 2 tablespoons chopped fresh thyme
  • 2 cloves garlic, minced or grated
  • 1 pinch crushed red pepper flakes
  • ⅓-⅔ cup whole milk or heavy cream
  • ¾ cup grated parmesan cheese
  • to drizzle none extra virgin olive oil
  • ¼ cup fresh basil leaves
  • 4 sprigs fresh thyme

Instructions

  1. 1. Boil salted water and cook the pasta until al dente, reserving 1 cup of the cooking water before draining.
  2. 2. In a skillet, melt butter and cook the corn with salt and pepper until lightly browned, then add thyme, garlic, and red pepper flakes.
  3. 3. Stir in milk and simmer, then add pasta, parmesan, and some reserved cooking water, tossing to combine.
  4. 4. In another skillet, heat olive oil and fry basil leaves and thyme until crisp.
  5. 5. Serve the pasta topped with fried herbs.
