Tomato and Spinach Pasta with Pistachio Parmesan

The Pistachio Parmesan

cup
pistachios (unsalted)

cup
nutritional yeast

tsp
sea salt
Instructions
- Cook pasta according to package instructions and set aside.
- In a medium pan, heat olive oil over low/medium heat.
- Add onions, garlic, and shallots to the pan and sauté for a few minutes.
- In a bowl, crush the cherry tomatoes with your hands and add to the pan.
- Stir in chopped spinach, honey, Italian seasoning, and salt.
- Bring the mixture to a simmer and cover for 30 minutes.
- To make the pistachio parmesan, blend pistachios, nutritional yeast, and sea salt in a food processor until desired consistency is reached.
- Toss the pasta with the sauce and top with pistachio parmesan.
