Tomato Walnut Basil Pasta

Ingredients

The sauce

  • 1 can crushed tomatoes (28 oz)
  • 2 tbsp extra virgin olive oil
  • ½ medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • a pinch red pepper flakes
  • ½ cup fresh basil leaves, chopped
  • 1 tsp kosher salt
  • to taste freshly ground black pepper
  • ½ cup nutritional yeast
  • 2 large handfuls spinach, roughly chopped
  • ½-¾ cup walnuts, roughly chopped

The pasta

  • to taste pasta of your choice

Instructions

  1. Chop the onion and garlic, then heat olive oil in a large skillet.
  2. Add the onion and cook for about 5 minutes, then add the garlic and cook for an additional 4-5 minutes until translucent.
  3. Stir in oregano, salt, and black pepper, cooking for a few minutes.
  4. Add crushed tomatoes, chopped basil, and nutritional yeast, stirring well. Bring to a low boil and simmer for about 5 minutes.
  5. Cook your pasta while the sauce simmers.
  6. Stir in chopped walnuts and spinach, cooking for about 10 minutes longer on medium-low.
  7. Serve the sauce over the pasta and garnish with basil leaves and additional walnuts.
